This can be easily reproduced by

1. launch the original Ribbon Document Editor sample.

2. Right click on the "Minimize the Ribbon" up arrow button and "Add to Quick Access Toolbar"

3. Notice that the button is disabled.

I believe this is a bug. Is there a work around to enable it?

I want to add that after adding it to the QAT, serialize the QAT to a file, close the app, open the app and deserialize the QAT, this button loses the label and also the image.

Hi Rex,

Thank you for reporting this.  That button isn't supposed to be supported in the QAT, and the menu item to add it shouldn't be in the menu.  We are removing the context menu item to add it to the QAT for the next maintenance release.
