I would like to have an option like touch mode (and mouse mode) where I make the ribbon buttons slightly bigger.
Can I set the width/height somehow for the buttons in the ribbon ?

Hi Daniel,
You would have to update the default templates for all the controls to make them larger (probably via more padding in templates) in the older Ribbon product. It unfortunately wouldn't be an easy thing to do.
That being said, in the ribbon control in our newer Bars product, we do have user interface density options that can enable touch friendly modes via a single option on the ribbon control. We designed the Bars ribbon to support three user interface density options, along with both Classic and Simplified ribbon layout modes.
