Titlebar broken at version 11.1.0 beta2

Yes we noticed that too several weeks ago, and it seemed to be a new bug introduced in a v11.1 beta commit.  However if you run against the latest master repo, it appears to be fixed again.  I'm not sure what commit resolved it, however I believe that the original commit that triggered it was this PR.  You'd have to contact the Avalonia team for more information since all of this was done on their end.
