Hiding Pin/Unpin buttons in RecentDocumentMenu

Sorry there isn't an option for the pins right now. You'd have to retemplate the control to achieve that.

As I understand I should have default template for RecentDocumentMenu control (with all the nested styles if any). Where I can get it?

If your company owns WPF Studio then whoever has access to the Actipro account can get the default XAML styles from the Organization Purchases page. All the related styles for this are in a RecentDocumentMenu.xaml file within the Ribbon portion of that ZIP.
